Instructions

Heat the oven to 200C. Remove the mushroom stalks and finely chop them.

Melt the butter with the oil and fry the chopped stalks and crushed garlic for 2-3 minutes.

Off the heat, mix in the breadcrumbs, most of the Parmesan and the chopped parsley. Season.

Arrange the mushroom caps on a baking tray and spoon the filling into each.

Scatter with the remaining Parmesan and bake for 15-18 minutes until golden and the mushrooms are tender.
