Instructions

Boil the eggs for 9 minutes, then cool under cold water and peel.

Halve the eggs lengthways and scoop the yolks into a bowl.

Mash the yolks with the mayonnaise and mustard until smooth, and season.

Spoon or pipe the filling back into the egg white halves.

Dust with paprika and scatter with chopped chives to serve.
