Instructions

Tear the bread into chunks and toast or griddle until golden and crisp.

Cut the tomatoes into wedges and place in a large bowl with a good pinch of salt. Leave for 10 minutes to release their juices.

Add the chopped cucumber, thinly sliced red onion and torn basil.

Whisk the vinegar and olive oil, pour over the salad and toss.

Add the toasted bread and toss again, then leave for 10 minutes so the bread soaks up the dressing before serving.
