Finely chop the prawns and mix with the pork, half the grated ginger, half the spring onions, the soy sauce and sesame oil.
Place a teaspoon of filling in the centre of each wrapper. Dampen the edges, fold into a triangle and pinch to seal, then bring the corners together.
Bring the stock to a simmer with the remaining ginger.
Drop the wontons into the simmering stock and cook for 4-5 minutes until they float and the filling is cooked through.
Ladle the wontons and broth into bowls, scatter with the remaining spring onions and a few drops of sesame oil, and serve.
