Instructions

Arrange the sponge fingers in the base of a glass trifle bowl and spoon over the sherry to soak.

Scatter over most of the raspberries, lightly crushing some to release their juice.

Pour the custard evenly over the fruit and chill for 30 minutes to set slightly.

Whip the cream to soft peaks and spoon over the custard, spreading to the edges.

Toast the flaked almonds until golden, then scatter over the top with the remaining raspberries. Chill until ready to serve.
