Instructions

Heat the oven to 150C and line a tray with parchment, marking a 20cm circle.

Whisk the egg whites to stiff peaks, then add the sugar a spoonful at a time, whisking until thick and glossy.

Whisk in the cornflour and vinegar.

Spoon the meringue onto the circle, building up the sides slightly to form a nest.

Bake for 1 hour, then turn off the oven and leave the pavlova inside to cool completely.

Whip the cream to soft peaks and pile onto the meringue. Top with sliced strawberries and the passion fruit pulp, and serve.
