Instructions

Peel and dice the potatoes and parboil for 6-8 minutes until just tender, then drain.

Heat the oil in a large pan and add the cumin seeds. When they sizzle, add the chopped onion and cook until soft.

Add the sliced garlic, chopped chilli and turmeric and cook for 1 minute.

Add the potatoes and fry for 5 minutes until they start to colour.

Add the spinach in handfuls, stirring until wilted. Season with salt and serve.
