Heat the oven to 170C and line a 20cm square tin. Rub 150g butter into the flour and caster sugar until it clumps, then press into the tin and bake for 20 minutes until pale gold. Cool.
For the caramel, gently melt the remaining 100g butter with the brown sugar, golden syrup and condensed milk, stirring constantly.
Bring to a gentle boil and cook, stirring, for 5-8 minutes until thickened and deep golden. Pour over the shortbread and leave to set.
Melt the chocolate and spread over the set caramel.
Chill until firm, then cut into squares with a hot knife.
