Instructions

If using dried noodles, soak or cook them until just pliable, then drain. Mix the soy sauces and oyster sauce in a small bowl.

Heat the oil in a wok until smoking hot. Add the garlic and prawns and stir-fry until the prawns turn pink.

Push to one side, crack in the eggs and scramble briefly.

Add the noodles and the sauce mixture, tossing over the highest heat so they pick up a smoky char, for 2 minutes.

Add the beansprouts and chives, toss for 1 more minute until just wilted, and serve immediately.
