A Japanese beef and onion rice bowl simmered in a sweet, savoury dashi-soy broth.

Freeze the beef for 20 minutes, then slice it as thinly as possible.
Thinly slice the onion. Bring the dashi, soy sauce, mirin and sugar to a simmer in a wide pan.
Add the onion and simmer for 5 minutes until softened.
Add the sliced beef, spreading it out, and simmer for 3-4 minutes until just cooked, skimming any foam.
Spoon the rice into bowls, top with the beef, onions and some of the broth, and scatter with sliced spring onions.
