If the rice cakes are firm or frozen, soak them in warm water for 10 minutes to soften, then drain.

In a pan, combine 400ml water with the gochujang, gochugaru, sugar, soy sauce and crushed garlic. Bring to a simmer.

Add the rice cakes and simmer, stirring often, for 8-10 minutes until they are soft and chewy and the sauce has thickened and turned glossy.

Stir through the sliced spring onions and serve hot, scattered with sesame seeds.
