Instructions

Slice the chicken into strips. Dip in beaten egg, then coat in 3 tbsp of the cornflour.

Heat 4 tbsp oil in a pan and fry the chicken until golden and crisp. Drain and set aside.

For the sauce, combine the lemon juice, sugar and stock in a pan and bring to a simmer.

Mix the remaining cornflour with a little water and stir into the sauce until thickened and glossy.

Return the crispy chicken and toss to coat.

Serve immediately with rice, garnished with lemon slices.
