Instructions

Slice the beef thinly against the grain. Slice the peppers and onion.

Heat 1 tbsp oil in a wok until very hot and stir-fry the beef in batches for 1-2 minutes until just browned. Set aside.

Add the remaining oil and stir-fry the peppers and onion for 3 minutes.

Add the garlic and ginger and cook for 30 seconds.

Return the beef, add the black bean sauce and a splash of water, and toss over high heat for 1-2 minutes until glossy and hot.

Serve immediately with steamed rice.
