
Strips of crispy fried beef tossed in a sweet, sticky and spicy sauce.

Slice the beef into thin strips. Dip in beaten egg, then toss thoroughly in the cornflour to coat.
Heat the oil to 180C and fry the beef in batches until deep golden and crisp. Drain on kitchen paper.
Pour off all but 1 tbsp of the oil. Fry the garlic and ginger for 30 seconds.
Add the soy sauce, vinegar, sugar and sweet chilli sauce and bubble until syrupy.
Return the crispy beef and toss quickly to coat in the sticky sauce.
Serve immediately with rice, scattered with sliced spring onion and chilli.
