Heat 2 tbsp oil in a wok and stir-fry the diced chicken until golden, then add the prawns and cook until pink.
Add the crushed garlic and chopped chilli and cook for 30 seconds.
Add the cold rice and stir-fry over high heat for 3-4 minutes until piping hot.
Stir through the kecap manis until the rice is evenly coloured, then add most of the spring onions.
Meanwhile, fry the eggs in the remaining oil until the whites are set and edges crisp.
Divide the rice between bowls, top each with a fried egg and the remaining spring onions and serve.
