Instructions

Cut the chicken into strips and marinate in the turmeric, cumin, half the coconut milk and a pinch of salt for 20 minutes.

Thread the chicken onto skewers (soak wooden ones first).

For the satay sauce, gently warm the peanut butter with the remaining coconut milk, soy sauce, sweet chilli sauce and lime juice until smooth. Loosen with a little water if needed.

Heat a griddle or grill to high and cook the skewers for 4-5 minutes each side until charred and cooked through.

Serve the skewers with the warm peanut sauce for dipping.
