Cut the chicken into bite-size pieces and toss in the cornflour with a pinch of salt to coat.
Heat the oil in a large pan and fry the chicken in batches until golden and crisp all over. Drain and set aside.
Pour off most of the oil, add the crushed garlic and cook for 30 seconds.
Add the sweet chilli sauce, soy sauce and a splash of water, and bubble for a minute until glossy.
Return the chicken and toss to coat in the sticky glaze.
Scatter with sliced spring onions and serve with rice.
