Instructions

Blitz the prawns with the spring onions, grated ginger, egg white and soy sauce to a smooth paste.

Spread the paste thickly and evenly over the slices of bread.

Press the paste side firmly into a plate of sesame seeds to coat.

Cut each slice into four triangles.

Heat the oil to 170C and fry the toasts paste-side down for 2 minutes, then flip and fry for 1 minute until golden and crisp.

Drain on kitchen paper and serve hot with sweet chilli sauce.
