Instructions

Heat the oven to 200C. Blitz the drained chickpeas with the onion, garlic, parsley, cumin, coriander and a pinch of salt to a coarse paste.

Shape into small patties and place on an oiled baking tray. Bake for 20-25 minutes, turning once, until golden and crisp.

Whisk the tahini with the lemon juice and enough water to make a pourable dressing.

Divide the rice between bowls and add salad of your choice.

Top with the falafel, drizzle with the tahini dressing and serve with a spoonful of hummus.
