Instructions

Heat the oven to 200C. Prick the sweet potatoes and bake directly on the shelf for 45-50 minutes until soft.

Warm the drained black beans in a pan with the cumin, smoked paprika and a splash of water. Season.

Mash the avocado with the lime juice and a pinch of salt.

Split the baked sweet potatoes open and fluff the insides with a fork.

Top each with the spiced beans, smashed avocado and a spoonful of yogurt. Finish with coriander and serve.
