Instructions

Heat the oven to 200C. Chop the vegetables into chunks, toss with 3 tbsp olive oil and salt, and roast for 25-30 minutes until tender and caramelised.

Put the couscous in a bowl and pour over the hot stock. Cover and leave for 5 minutes, then fluff up with a fork.

Stir the remaining olive oil and the lemon juice through the couscous.

Fold the roasted vegetables through the couscous.

Season, scatter with fresh herbs and serve warm or at room temperature.
