Heat the grill. Beat the eggs in a bowl and season.

Heat the oil in an ovenproof frying pan and soften the chopped onion, diced courgette and pepper for 6-8 minutes.

Pour in the eggs and cook over low heat for 5-6 minutes until the base and sides are set but the top is still a little runny.

Scatter over the grated cheese and place under the grill for 3-4 minutes until puffed, golden and set.

Slide out, cut into wedges and serve warm or cold with salad.
