Heat the oven to 200C. Cut the cauliflower into florets and boil for 5 minutes until just tender, then drain well and tip into a baking dish.
Melt the butter in a pan, stir in the flour and cook for 1 minute. Gradually whisk in the milk to make a smooth sauce, then simmer until thickened.
Off the heat, stir in most of the cheese and the mustard. Season well.
Pour the sauce over the cauliflower and scatter with the remaining cheese.
Bake for 20-25 minutes until golden and bubbling.
