Instructions

Fry the chopped onion in the oil until soft, then add the grated garlic, ginger and curry powder and cook for 1 minute.

Add the peeled, cubed sweet potato and stir to coat in the spices.

Pour in the coconut milk and a splash of water, then simmer for 20 minutes until the sweet potato is tender.

Stir in the drained chickpeas and cook for 5 more minutes.
