Buttery, crumbly Scottish shortbread with just three ingredients.

Heat the oven to 160C and line a shallow tin.
Beat the softened butter and sugar together until just combined.
Sift in the flour and cornflour with a pinch of salt and mix to a soft dough.
Press evenly into the tin and prick all over with a fork.
Bake for 30-35 minutes until pale golden. Mark into fingers while warm and dust with a little sugar.
Cool completely in the tin before cutting and removing.
