
A light, airy French-style dark chocolate mousse.

Melt the chocolate and butter together gently, then leave to cool slightly.
Separate the eggs. Stir the yolks into the melted chocolate one at a time.
In a clean bowl, whisk the egg whites to soft peaks, then add the sugar and whisk to stiff, glossy peaks.
Fold a spoonful of the whites into the chocolate to loosen it, then gently fold in the rest, keeping it airy.
Spoon into serving glasses and chill for at least 3 hours until set.
Serve topped with a little grated chocolate or cream.
