Instructions

Soften the chopped onion and diced carrots in the olive oil for 8 minutes.

Add the garlic and cumin and cook for 1 minute until fragrant.

Stir in the rinsed lentils, chopped tomatoes and stock. Bring to the boil, then simmer for 20-25 minutes until the lentils are soft.

Blend partly or fully for a smoother texture, if you like. Season to taste.

Serve with a squeeze of lemon and warm bread.
