Instructions

Finely chop the onion, carrots and celery. Soften in a little oil in a large pot for 8 minutes.

Pour in the stock and bring to a simmer.

Add the whole chicken breasts and poach gently for 15 minutes until cooked through. Lift out and shred.

Add the noodles to the broth and cook until tender, about 5 minutes.

Return the shredded chicken, season to taste and stir through the chopped parsley. Serve hot.
