Instructions

Slice the halloumi into 1cm pieces and pat dry.

Heat a dry griddle pan until hot and cook the halloumi for 1-2 minutes each side until golden with char marks.

Meanwhile, chop the tomatoes and cucumber and combine with the rocket and mint in a bowl.

Whisk the lemon juice and olive oil and toss through the salad.

Top with the warm halloumi and serve immediately.
