Instructions

Heat the oven to 200C. Cut the potatoes into thick wedges and place in a large roasting tin with the chicken thighs.

Scatter over the crushed garlic and oregano, squeeze over the lemon juice and add the squeezed halves.

Drizzle with the olive oil, pour in the stock and season well. Toss to coat.

Roast for 50-60 minutes, basting once or twice, until the chicken is golden and the potatoes are tender and crisp at the edges.

Rest for a few minutes, then serve with the pan juices spooned over.
