Cut the chicken into bite-size cubes.

Mix the lemon juice, crushed garlic, oregano and olive oil, and toss with the chicken. Marinate for at least 30 minutes.

Thread the chicken onto skewers (soak wooden ones first).

Heat a griddle or barbecue to high and cook the skewers for 10-12 minutes, turning, until charred and cooked through.
