Instructions

Toast or grill the pita until crisp, then break into bite-size pieces.

Chop the cucumber, tomatoes, radishes and lettuce into a large bowl and add the roughly chopped parsley.

Whisk the lemon juice, olive oil and most of the sumac with a little salt to make the dressing.
