Cover the bulgur with boiling water and leave for 15 minutes to soften, then drain well and squeeze out any excess liquid.

Very finely chop the parsley and mint.

Finely dice the tomatoes and slice the spring onions.

Combine the bulgur, herbs, tomatoes and spring onions in a bowl.

Dress with the lemon juice and olive oil, season with salt and toss well. Rest for 10 minutes before serving.
