A smooth, comforting soup of gently softened leeks and potato in a light stock.

Slice the leeks and chop the onion and potatoes.
Melt the butter in a large pan and gently soften the leeks and onion for 8-10 minutes without colouring.
Add the potatoes and stock, bring to the boil, then simmer for 15-20 minutes until the potato is very tender.
Blend until smooth, then stir in the cream and season to taste.
Reheat gently and serve with crusty bread.
