Instructions

Melt the butter in a small pan, stir in the flour and cook for 1 minute.

Gradually add the ale, stirring, then add the grated cheese, mustard and Worcestershire sauce. Stir over low heat until you have a thick, smooth sauce. Do not boil.

Toast the bread on both sides.

Spread the cheese mixture thickly over the toast.

Grill under a hot grill for 2-3 minutes until bubbling and golden. Serve at once.
