Heat the oven to 220C and dust a baking tray with flour.
Rub the cold butter into the flour until the mixture resembles fine breadcrumbs, then stir in the sugar.
Warm the milk slightly and stir into the mixture to form a soft dough – don't overwork it.
Pat out on a floured surface to about 4cm thick and cut out rounds with a cutter.
Place on the tray, brush the tops with beaten egg and bake for 10-12 minutes until risen and golden.
Cool slightly and serve warm, split, with clotted cream and jam.
