Instructions

Fry the sausages gently in a little oil for 15-20 minutes, turning, until browned all over and cooked through.

Meanwhile, boil the peeled, chopped potatoes until tender, drain and mash with most of the butter and the milk. Season well.

For the gravy, slowly fry the thinly sliced onions in the remaining butter until deep golden, about 15 minutes.

Stir in the flour and cook for 1 minute, then gradually add the stock, stirring, and simmer to a glossy gravy.

Serve the sausages over the mash with plenty of onion gravy.
