Instructions

Heat the oven to 220C. Pat the wings very dry and toss with the baking powder and a little salt – this helps them crisp.

Spread out on a rack over a baking tray and roast for 40-45 minutes, turning once, until deep golden and crisp.

Melt the butter and whisk in the hot sauce and crushed garlic to make the buffalo sauce.

Toss the hot wings in the sauce until fully coated.

Mash the blue cheese into the soured cream for a quick dip. Serve the wings hot with the dip and celery sticks.
