Heat the oven to 200C. Cook the macaroni until just short of al dente, then drain.
Melt the butter in a pan, stir in the flour and cook for 1 minute. Gradually whisk in the milk to make a smooth sauce, then simmer for 3-4 minutes until thickened.
Off the heat, stir in most of the cheese and the mustard until melted. Season well.
Fold the macaroni through the sauce and tip into a baking dish.
Mix the breadcrumbs with the remaining cheese and scatter over the top.
Bake for 20-25 minutes until bubbling and golden. Rest for 5 minutes before serving.
