Instructions

Whisk together the flour, baking powder, sugar and a pinch of salt in a bowl.

In a jug, whisk the buttermilk, eggs and most of the melted butter.

Pour the wet ingredients into the dry and stir just until combined – a few lumps are fine. Don't overmix.

Heat a non-stick pan over medium heat and brush with a little butter. Ladle in rounds of batter.

Cook for 2 minutes until bubbles appear on the surface, then flip and cook for another 1-2 minutes until golden.

Stack the pancakes and serve with butter and maple syrup.
