
Sichuan noodles in a nutty, spicy sesame and chilli sauce topped with savoury minced pork.

Fry the pork mince in the oil over high heat until crisp and browned, then add half the garlic and ginger and 1 tbsp soy sauce. Cook for 1 minute and set aside.
In each serving bowl, whisk together the sesame paste, chilli oil, remaining soy sauce, garlic and ginger with a couple of spoonfuls of hot water to make a loose sauce.
Cook the noodles according to the pack, then drain, reserving a little cooking water.
Add the noodles to the bowls and toss through the sauce, loosening with a splash of the noodle water.
Top with the crispy pork and sliced spring onions and serve, stirring everything together before eating.
