Freeze the beef for 30 minutes, then slice it as thinly as possible against the grain.

Grate the pear and mix with the soy sauce, grated garlic and ginger, sugar and sesame oil to make the marinade.

Toss the beef in the marinade and leave for at least 20 minutes.

Heat a large pan or wok until very hot and sear the beef in batches for 1-2 minutes until caramelised at the edges.

Scatter with the sliced spring onions and sesame seeds and serve with steamed rice and kimchi.
