Mix the soy sauce, mirin, sugar, grated ginger and garlic to make the teriyaki sauce.

Heat the oil in a frying pan and cook the chicken thighs skin-side down until golden, then turn and cook through, about 12 minutes total.

Pour off any excess fat, then add the sauce to the pan.

Let it bubble and reduce for 2-3 minutes, turning the chicken to coat in the glossy glaze.

Slice the chicken and serve over rice, spooning over the sauce and scattering with sesame seeds and spring onion.
