Instructions

Fry the chopped onion, garlic and chilli in half the oil until soft.

Add the chopped tomatoes and simmer for 8-10 minutes to a thick sauce. Stir in the drained black beans and warm through. Season.

Warm the tortillas in a dry pan and keep them wrapped in a cloth.

Fry the eggs in the remaining oil until the whites are set but the yolks still runny.

Place two tortillas on each plate, spoon over the ranchero sauce and top with the fried eggs. Finish with coriander.
