Instructions

Fry the chopped onion and garlic in the oil until soft, then add the chopped tomatoes and chilli powder. Simmer for 10 minutes and blend to a smooth sauce. Season.

Return the sauce to the pan and bring to a gentle simmer.

Add the tortilla chips and toss to coat, cooking for just 1-2 minutes so they soften slightly but keep some bite.

Meanwhile, fry the eggs to your liking.

Divide the chilaquiles between plates, top each with a fried egg and crumble over the feta. Serve straight away.
