Crisp, spiced onion fritters bound in a gram flour batter – a popular Indian starter.

Thinly slice the onions and place in a bowl with a good pinch of salt. Leave for 10 minutes, then squeeze gently to release moisture.
Add the gram flour, cumin, turmeric, garam masala and finely chopped chilli. Mix, adding a splash of water only if needed to make a thick, clinging batter.
Heat the oil to 170C. Drop in small clusters of the mixture and fry for 3-4 minutes until deep golden and crisp.
Drain on kitchen paper, season with a little salt and serve hot with mango chutney or raita.
