Comforting yellow lentils finished with a sizzling tempered spice oil (tarka) of cumin, garlic and chilli.

Rinse the lentils well, then put in a pan with the turmeric and 750ml water. Bring to the boil, skim, then simmer for 20-25 minutes until soft and thick, stirring occasionally. Season with salt.
For the tarka, heat the oil in a small pan and add the cumin seeds and dried chillies. When they sizzle, add the sliced onion and cook until golden.
Add the sliced garlic and fry until fragrant and just golden – don't let it burn.
Pour the sizzling tarka over the dal, stir through and serve with rice or naan.
