Instructions

Peel and dice the potatoes and cut the cauliflower into florets.

Heat the oil in a large pan and add the cumin seeds. When they sizzle, add the finely chopped onion and cook until soft.

Stir in the grated garlic, ginger and turmeric, then add the potatoes and cauliflower and toss to coat.

Add a splash of water, cover and cook over medium heat for 20-25 minutes, stirring occasionally, until the vegetables are tender.

Uncover, sprinkle over the garam masala and cook for a few minutes to dry out slightly. Season and scatter with coriander to serve.
