Instructions

Heat the oil and fry the finely chopped onions for 8-10 minutes until deep golden.

Add the grated garlic and ginger and cook for 1 minute, then stir in the cumin, coriander, turmeric and half the garam masala.

Pour in the chopped tomatoes and cook for 8 minutes until thick and glossy.

Add the drained chickpeas with a splash of water and simmer for 12-15 minutes, lightly mashing some chickpeas to thicken the sauce.

Stir in the remaining garam masala, season with salt and finish with a squeeze of lemon. Serve with rice or flatbread.
