Instructions

Blanch the spinach in boiling water for 1 minute, drain, refresh under cold water, then blend to a smooth purée.

Cut the paneer into cubes and lightly fry in 1 tbsp oil until golden on all sides. Set aside.

In the remaining oil, fry the finely chopped onion until soft, then add the grated garlic, ginger and chopped chilli and cook for 1 minute.

Stir in the cumin and garam masala and cook for 30 seconds until fragrant.

Add the spinach purée and a splash of water, and simmer gently for 5 minutes. Season with salt.

Stir in the paneer and cream, warm through for 2-3 minutes and serve with rice or roti.
